We chose the wine pairing, and it was exceptional—featuring several rare and difficult-to-source wines that were thoughtfully matched to each course. These selections didn’t just complement the food—they elevated the flavors and deepened the experience in a way only a true culinary artist could achieve.
The service was impeccable. The chef and his team personally presented each course, explaining the inspiration behind each dish and any modifications made for allergies. My spouse has a dairy allergy, and not only did they accommodate her needs, they made her feel genuinely cared for, even preparing custom versions of some dishes just for her. That level of hospitality and attentiveness is rare.
The setting is intimate and warm, with only 10 to 15 guests each evening. We were initially unsure if we’d feel comfortable, as we don’t speak French fluently, but the chef and staff were incredibly gracious. Multiple languages were spoken by guests, and we were made to feel completely welcome. In fact, the chef spoke English so fluently we asked if he was from London!
ÉTUDE is more than a restaurant—it’s an experience, and one we’ll remember for years. If we return to Aix, we will absolutely make it a priority to dine here again. A true gem, and fully deserving of its Michelin star.

Aucune fausse note, tout était parfait : des associations de saveurs osées et maîtrisées et la qualité sont au rdv dans chaque plat. Le chef et son équipe prennent le temps de détailler chaque assiette.
Mention spéciale pour le homard et le ris de veau.
Juste à savourer
Nous sommes dans l'excellence, mais deux petits points à noter:
* l'apéritif à l'eau de tomate ne se marie pas bien avec le champagne - peut-être vaut-il mieux achever la dégustation du champagne avant de l'entamer? Ou alors utiliser des ingrédients comme l’artichaut ou le fenouil, qui se marient bien avec le champagne.
* en été les verres se réchauffent vite; les blancs sont servis bien frais mais l'excellent Vosne Romanée qu'on m'a servis aurait pu bénéficier d'un peu plus de frais.

First, the temperature inside was uncomfortably hot. The AC clearly wasn’t working, with all doors and windows flung open. When we politely asked if it could be adjusted, the waiter’s response was shockingly rude. He claimed it was “just 25 degrees” and told me that if I felt hot, something was wrong with me—perhaps due to what I’d eaten earlier (???). Not the professionalism you’d expect from a Michelin restaurant.
Service continued to disappoint. When booking, we had flagged my shellfish allergy in advance. Upon arrival, the staff seemed unaware and unprepared, despite the heavy presence of shellfish on the menu. Though they eventually accommodated, it felt like a hassle rather than standard hospitality. Similarly, the restaurant overlooked that it was our anniversary—another detail provided ahead of time.
Throughout the meal, the inattentiveness continued. Sauce was spilled on our table during one course and never cleaned up, even though the server returned later to brush away breadcrumbs. No alcohol-free wine or champagne options were available, which is surprising at this level. I had to settle for peach juice, which was never cleared—attracting flies. My husband asked for the wine list multiple times, but it never arrived.
While the food was good, the service and atmosphere fell far short. The lack of care for details and dismissive attitude made us feel unwelcome—an inexcusable experience, especially at this price point.
Merci au chef (avec qui nous avons eu plaisir à discuter à la fin du service) ainsi qu’à sa brigade pour ce moment où l’épicurisme est à son paroxysme !!
Nous reviendrons, c’est certain !
Qualité du service toujours au rendez-vous avec une explication détaillée de chaque plat un accueil et une disponibilité de tous y compris du chef hors pair. Bref, Le restaurant à aller à Aix, vous ne serez pas déçu. A quand le seconde étoile !
