È un’esperienza oltre che mangiare molto bene.
En plus les chefs sont très sympa, très motivés pour offrir une belle expérience et en plus un service sympathique et discret
We went at lunch on a Saturday and it was great, few spots at the counter for an intimate lunch, quality is high, staff is nice and the chef spent some time to chat with us
Sushi parlons en, des magiques thon gras, mi gras, saumon, encornet avec une pointe de yuzu… une st Jacques tout aérienne ☁️.
Des poissons plus exotiques comme du 金目鯛 / kinmedai (beryx).
Un 鯖寿司 / sabazushi (maquereau) « spectacle » grillé au 備長炭 / binchotan (charbon japonais)
Petite rue peu passante, un moment hors de Paris en plein Paris.
Pour les belles occasions. Équipe très sympathique !

見た目も美しい、凝った小鉢をつまみつつ、ゆっくり進んでいく楽しい時間。
握る前のネタが桐のお盆に整然と並び、丁寧な仕事ぶりを感じさせます。
お鮨はどれもひと手間かかった洗練された味わい。
日本の上質な調味料とフランスの新鮮な魚や野菜の融合は、ここだけでしか食べられない味です。

A small high end sushi ya in the 1st district
The great thing here compared to other one star sushi ya is the service. Strangely, it’s also the negative point. Let me explain. But first let’s give the context and a general review. You’re in a very high end sushi place, the chef does the show and you’re amongst the only 7 persons in paris to enjoy it for this service! Very vip. The ingredients are only the best. The chef is super picky and will remove any defects. He has his secret recipe for the rice, but the sushi holds less than a minute so you have to hurry.
The difference with the other I already posted a review (Sushi B) is mainly the price (double) in exchange for more service (triple!). The waitresses are the perfect representatives of the high end Japanese restaurants. Note that the chef will be the reference for everything (in France for the wine it’s the sommelier for example). I have nothing but praises towards the waitresses that I had. They were extremely nice, diligent and professional. Strangely, I was a bit surprised by the chef second (the chef assistant) who was the most acclimated to the western civilization (he spoke perfect French for instance). I perceived a bit of a French condescending attitude in contrast with the others (also in contrast with other Étoilé where they are careful of not behaving like the stereotypical French waiter in a tourist trap). I perceived it on his answer to one question, where I realized that he had no/few experience of the other Japanese étoilé in Paris, compared to me. So do not pay attention, focus on the food, atmosphere and rely on the waitresses to feel the respect you deserve for the price you pay. Because they really do make you feel special.
Perfect for couples or business.
Does deserve its star based on the quality of the ingredients and the craft of the chef.

Update 2022: went back 11 months later. We were 8 this time. Some changes in the dishes. But roughly the same at the end of the day. High end, expensive but with high quality and especially with a high staff/client ratio. The staff changed and grew a little bit. I saw at least two new members.
Bottom line, it still does deserve its star.

Sinon la qualité des plats est excellente. Le service impeccable.
Mais pour moi un rapport "qualité prix" non favorable. L'excellence à un prix semble-t-il. Cher...
