파리를 2년만에 재방문 하면서 생각이나 올립니다
개인적으로 파리에서 최고의 맛이였고 지금도 생생하게 생각이 납니다
음식의 온도, 채소의 익힘, 사바용의 텍스처, 생선의 식감 그리고 소스의 깊은 맛까지 해산물을 주제로 이렇게 까지 감동적인 생선요리들은 맛 본적이 없었습니다. 존경스러움이 또 다시 느껴지네요
명성이 대단한 셰프님답게 보여주신 맛은 fine 그 자체였습니다

2eme visite dans ce restaurant qui sublime la mer. Tout était parfait.
Le service l’atmosphère et surtout la cuisine du chef. Les plats sont délicieux et magnifiquement présentés.Les saveurs sont fines et délicates.

The best dinner experience I’ve ever had. I had goosebumps after tasting the dishes and their wine.

I ordered a bottle of Meursault for my table and we didn’t finish the bottle yet. The table next to us ordered Sancerre. At some point the lady server poured Meursault to the next table. Me and my friend immediately realized that is not the bottle the next table ordered. We are serious wine drinker so we know the difference between the bottles and the producers only by seeing the color or label of the bottles. But we didn’t tell at that moment, because it could be the second bottle of wine that the table next to us ordered. (And by the way this place is so tiny that the tables next to each are so close enough to see what they are having). But when I asked the woman if I can have rest of my wine, she said the bottle is finished. Me and my friend asked if she poured our bottle to the next table by mistake, but she said she only gave them Sancerre. But why was our wine gone that we didn’t even finish? And why did we see her giving Meursault to the next table? We kept asking her and wished if there was a recording camera. None of the staffs apologized or admitted their mistake. They kept saying they poured correct wine. Never heard a single apology. We just gave free wine to the next table and lost ourselves. My friend brought me here after coming this place for 3 consecutive years but both she and I disappointed very much. Very bad service and ego.

When I’m in Paris, I never fail to dine here. A superb magic of creating dishes of fish. You can tell the chef really loves making good food. A pure passion. I can’t wait to come back here again!

눈부신 커리어의 셰프님이 근처 동네에서 여신 원테이블 레스토랑같은 느낌. 다행히 원테이블이 아니라서 가격은 그리 나쁘지 않다. 흠잡을 데 없는 서비스와 분위기, 조촐하지만 확신에 차있는 와인리스트 (2022년 기준 2종류밖에 없었다), 특별한 무언가를 맛보진 못했지만 모든 재료가 완벽하게 조리되었고, 굳이 흠을 찾아보라고 해도 완패인 무결점의 생선 코스요리.

If you like seafood, it is by far the best place in Paris. Beware, despite its name this is not a Japanese restaurant. Hakihiro-san cooks the finest French cuisine. The decor is sober and neat, the service friendly and efficient, the wine list is short but adequately thought. Hakihiro-san is a master in fish cooking, as a Basque gourmet I can attest it.

Dishes were nice even though their main courses were a bit overlapped because they used white fishes as their main dishes. However, the server treated us awfully. I don't understand how she talked to us from the beginning about blaming us for not giving a confirmation call to them. In the end, she mixed up our wines into one glass and simply said a word 'sorry'. I can not imagine how she could do that and didn't take any responsibility for that. This was an awful night for our family, and I hope the server regrets her mistake.

Precies om 20:00 uur gaat de deur van restaurant open; weinig tafeltjes geeft intieme sfeer, de gastvrouw is horeca onhandig; een vast menu voor €110; visgerechten op hoog niveau; geen bijzondere opmaak van de borden. Het lijkt dat de kok en de bediening haast hebben; om 21:30 sta je weer buiten. De wijnen zijn opvallend duur; eigenlijk te duur. Het eten is goed; maakt opgeroepen reputatie niet helemaal waar. De sfeer is niet echt gastvrij. Jammer; hadden er meer van verwacht.

What an experience. Know the chef from his previous restaurant. I believe he is a real master of seafood.
The feast started with a tuna wrapped with a thin phyllo dough and served with tomato sauce.
Then we moved to the second course, lobster tail, cream bisque and "beurre noisette" brown butter. What a masterpiece. Super delicious, balanced and layered. Simply amazing.
The third course was pan fried (and then might be roasted) hake fish, served with carrot confit and something like a sabayon sauce. Again delicious.
Last course was a piece of turbot, served with white asparagus. Very well seasoned and cooked.
The dessert was a dacquoise served with caramelised (flambe) pineapple. Such a delicious and well balanced dish.
My daughter was with us and he prepared her dessert without using alcohol. What an attention to detail.
Quite a small place only 14 seats are available.
Will definitely visit again, highly recommended.

Reservation required. You can communicate in French, or Japanese.
It is hard to get connected on a call during their business hours. I highly recommend to make a phone call between 10AM and 12PM.
There are only one course and drinks on the menu.
Non-alcoholic drinks are only still water and sparkling water.

Une table gastronomique intimiste et discrète par un chef japonais, ancien de l'Ambroisie qui fait honneur à la cuisine de Mr Pacaud.

Food = 5 stars, very good
Quality price ratio = minus one star - the food was really good, but not exceptional
Organization = minus one star. I found it frustrating to see other people have a lobster menu when I was never told it was an option (this despite enquiring about the menu when booking a table)

It was a perfect dinner. The quality of the food was excellent, and I was very satisfied with the high quality and friendly service. You can rarely find a satisfactory restaurant in Paris like this one. You should definitely visit!

너무 극찬이 많아서 기대가 많았는데 조금은 아쉬웠어요. 세심하고 디테일한 소스 맛이 좋았던 것이 장점이었는데 반해서, 메인 생선이 흰살 생선으로 겹치고 식감도 약간은 겹쳐서 조금 아쉬운 면이 있었습니다

맛있었지만 다른분들만큼 감동하진 못했어요. 우선 메뉴 하나하나의 맛만 본다면 맛있었어요. 하지만 저는 코스 요리에서 가장 중요하게 보는 점이 ‘매 코스마다 소스와 식감의 변주가 얼마나 다양하게 이뤄지는가.‘인데요. 처음부터 끝까지 비슷한 계열의 크림 소스로 이뤄진 코스였기 때문에 저는 심심하다고 느꼈습니다. (예전에 다른 가게의 디저트 코스를 갔을 때 처음부터 끝까지 상큼한 셔벳 아이스크림이 계속 나와서 혀가 자극받지 못했던 경험이 있는데, 아키히로도 그런 느낌이었습니다.) 생선이 확실히 부드럽고, 소스 안에서 뭐라 말하기 어려운 여러 맛이 났지만.. 코스 내내 그런 음식이 이어진다면 개인적으로 저는 만족하기 어려운 것 같습니다.
