We dined at Carboni’s last night and unfortunately had a deeply disappointing experience. Our pastas arrived undercooked and were simply inedible. We sent them back, opting not to order replacements as it was already late in the evening.
When we reviewed the bill, we noticed the pastas were still included. We asked to speak with the evening shift manager, hoping to resolve the issue respectfully. Instead, we were met with unexpected hostility. He insisted the dishes were “perfectly fine” and that we were obligated to pay for them, despite the fact that they had been returned. His tone was combative, dismissive, and entirely unprofessional.
Having worked in the hotel and hospitality industry for 16 years, I can confidently say this was one of the most mishandled customer interactions I’ve witnessed. When I asked for the general manager’s or owner’s contact information to follow up, he refused to provide either.
Customer service starts at the top, and if this individual’s attitude is allowed to persist unchecked, it will only undermine the restaurant’s team and the guest experience at Carboni’s. If he were part of my organization, his conduct would have warranted immediate dismissal.
For context, I rarely send food back and can count on one hand the number of negative reviews I’ve left. But this experience warranted one.
The restaurant is very well designed and gives an elegant but chill feel. We ordered our food and we were shocked that we were able to see the bottom of the bowl due to how small the portion was.
The Cacio e pepe had great flavour and the noodles were cooked perfectly. For the price I expected to leave like I’ve eaten dinner.
The lobster pasta didn’t have big pieces of lobster and we thought it might have been shrimp.
There are better Italian place that have the small vibe, better prices and regular sized portions!
Bref, c’est bien pour les americains de passage à paris. Impression d’avoir gaspiller mon argent (+300€ pour deux) Cerise sur le gâteau : être assis à côté de la cage d’escalier avec des relents d’odeur d’égouts ????????
Malheureusement le service n’est pas au niveau, ou tout du moins pas constant. Nous avons eu l’impression d’être expédiés (apéro oublié, repas entier en 1h…).
Merci tout de même à la serveuse brune (ceinture rouge et en jean) qui s’est faite remarquer par son professionnalisme.
Dommage, l’ambiance est vraiment sympa.
Encore quelques efforts et ce sera top !

Par contre le mocktail était excellent
Les pâtes sont à tomber, aussi bien au sens propre qu'au sens figuré. Cadre raffiné, prix correct. C'est LE lieu sûr pour aller manger et passer une bonne soirée.
Enfin, pour finir, la musique n'est pas trop forte, et donc très agréable pour échanger avec son convive.
Excellent vin excellent service et leurs caccio e peppe sont à tomber.

I have been dying to try this place since a very long time. Finally had a chance to go for my bestfriends birthday. We ordered spritiz for starters which took a very long time. It was hard to make an eye contact with the servers because they were no where to be seen. The second server was very nice and brought candle.
Thw food is very delicious however the choices are not very much. I would expect more choices of pasta for a place like here.
The inside is beautifly decorated so much beautiful. However, I would not go there again, its best to try and see if the places are worth the hype.
