When making the reservation, I indicated that one person was allergic to garlic. The first appetizer (the pissaladière) had a large enough quantity to be a problem. The fish dish had two potato cubes that were uncooked. We asked the waitress if this was what the chef wanted. No one came to give us the answer. The meat dish was lamb served blue. Three out of 5 people did not touch it. When the waitress came to remove the plates, I explained that we didn't eat raw meat that much.
We fell back on bread. Since it had been cut before service, it was dry. Additional disappointment since Paris has excellent bakeries.
At 588 euros for 5 people, we would have liked more warmth and flavor.
We will not recommend Baieta.

We tasted the lunch menu, and perhaps other set meals/a la carte dishes would be different.
Creativity and appearance/presentation
The appetizers were creative, the combination of ingredients and the presentation. The order of tasting was also designed meaningfully.
The starter was a bit messy presented, and I was disappointed by the inconsistency of the ingredients. Each person got about 6-7 white asparagus pieces, while my wife had two asparagus heads on her plate, I had only one head. My asparagus pieces were of different length and thicknesses, the thickest was almost twice the thinnest, consequently the texture was inconsistent.
The second dish was Bouillabaisse, served with mussel salad. It's a good idea to use salad to neutralize the taste of the fish soup.
The dessert presentation is a matter of opinion, I think it's okay.
Taste
The appetizer tasted good, but the only drawback was that the main ingredients overwhelmed the other seasonings. The chef probably wanted to add the finishing touch, but this was not very successful.
The starter tasted excellent in terms of taste, and the balance of the ingredients was also well grasped.
The fishes in the Bouillabaisse were very tender and fresh, and the soup was rich and fragrant, which was no different from what I tasted in Marseille. It was great. But!!! Not all mussels in the salad were fresh. I got 4, the first one was fresh, the second was smelly and bad, the third had taste but not smelly, and I didn't eat the fourth one.
The desserts and snacks were delicious.
Service
We didn't make a reservation in advance. When we arrived at the store, we saw that there were tables, but the waitress said it was fully booked. However, we tried online reservation, and it was still possible. There might be something wrong with the online system. In short, after a small setback, we were seated.
When the waitress asked for feedback, we shared some mussels were not fresh. But she insisted that all the ingredients were purchased on the same day and were absolutely fresh, maybe I am not used to the taste of fresh mussels. As a person who was born and raised in a coastal city and cook often seafood at home, I definitely can tell whether the seafood is fresh. I have no doubt that the store purchased it on the same day, but it is always possible that the kitchen makes mistakes. Moreover, since the store took the initiative to ask for feedback, there is no reason or need to refute and persuade the customer.
There is a waiter in the store who is very friendly but quite shy and unskilled in business. Sometimes he needs help and guidance from others. The other waiter is very professional.
Overall, as a Michelin one-star restaurant, there are too many things that can and shall be improved.
Très bon choix Nous sommes arrivés tôt, avant le coup de feu. Accueil chaleureux et service impeccable, cuisine méditerranéenne revisitee, subtile, raffinée, étonnante, originale, avec de belles présentations dans une vaisselle recherchée
Belle soiree
L’accueil était bien, notre serveur très pro (au début).
Nous commençons le repas, les plats s’enchaînent, tout était plutôt bon, rien d’exceptionnel mais bien exécuté.
Nous sommes rapidement déçus par l’accord des vins, des vins assez bas de gamme (pas grave en soit) mais qui ne s’accordait pas avec les plats.
Puis vient le moment où la cheffe s’en va, nous avons commencé à assister aux grandes discussions et rigolades du personnel en salle avec d’autres serveurs et cuisiniers, notre serveur nous a servi le dernier verre de vin mais ne l’a pas présenté, puis a donner sa table à j’imagine une nouvelle serveuse (qui elle est restée très pro jusqu’au bout) pendant que lui rigolait avec ses collègues.
Nous avons finalement fini le repas avec un dessert plus que simple autour d’un sorbet coco, un crémeux, un peu de meringue et quelques kiwis coupés.
Nous sommes ressortis déçus par la cuisine bonne et bien exécutée mais très simple, et par le manque de professionnalisme de ces employés qui ont totalement changé de comportement au départ de leur cheffe, ainsi qu’une note à 480€ pour deux.
Je pense vraiment qu’à Paris on peut trouver bien mieux pour le même prix.
The food was really well presented and the flavours were all in all excellent. Some more than the other.
The amuse-bouches were 10/10, the apps were 8/10 and the main course was 9/10. Dessert was a bit underwhelming at a 6.5/10. That's mainly because it was gluten and lactose free due to restrictions in diet.
Another thing is also that I specified two weeks before that one of the guests has a lactose and gluten-intollerance. This was not noted by our server who then proceeded to ask us again, and seemed a bit surprised. However, it was very professionally and kindly handled by him. I also want to thank him for speaking english with us since our french was not the best. Props for that.
There are unfortunately some less positive things to note here. The restaurant seemed way too busy for just 2 servers (it was completely full for at least 1.5 hours) and they seemed to have a difficult time getting to everyone. Our amuse bouches came after almost 30 minutes waiting, which is excessive for a one star Michelin restaurant. The level of noise was also a bit too high for this kind of theme and atmosphere.
What also ticked me personally off a bit, is that when ordering coffee after the dessert, I wasn't allowed to order a glass of cognac as an "avec". The server just looked around, and kind of rudely said "no" as it was not possible. This has never happened to me before in other michelin starred or even lower rated restaurants anywhere else in Europe.
It would have been ok to get a notice beforehand that they didnt have cognac or whatever the case was, as this was quite unpleasant.
All in all though, a great experience, amazing well crafted and tasty dishes with an excellent presentation, oh and the wines were perfectly paired as well! Highly recommended, just don't go when it's super crowded and keep in mind to remind them of any allergies or dietary restrictions.
Une très belle découverte qui mérite le détour ! Dès les premières bouchées, la cuisine de cette jeune cheffe méditerranéenne nous transporte, assumant pleinement ses origines avec des marqueurs forts comme l'ail, l'olive ou son huile d'exception. Chaque plat est travaillé avec passion, notamment cette version revisitée de la bouillabaisse, absolument divine et digne des plus grandes tables. Le service, à la fois chaleureux et professionnel, contribue grandement à cette belle expérience.
Petit bémol toutefois : la salle, un peu trop compacte pour le standing, et un enchaînement des plats un peu rapide sur les premiers temps du repas ⏳.
Malgré ces détails, l'étoile Michelin est amplement méritée et témoigne du talent en cuisine ! Je recommande chaleureusement cette adresse !

Como demonio se puede servir pollo crudo, no me lo he podido comer del asco que me ha dado, ni qué decir del resto de platos, nada especial, ayer cené en un restaurante normal y corriente, turístico, gasté menos de la mitad y cené mucho mejor, lamentable.
We elected the 4 course dinner, which of course comes with all the extras and ended up more like a 6 course over 1.5-2hr dining experience. The courses were apps, the signature app (the egg thingy), fish, chicken, kiwi whip cream desert, and more deserts.
My faves are the egg app and the kiwi dessert. The fish was our least favorite, it was a bit too earthy tone to our taste. The fish dish also came with a salad with a thinly toasty cheese bread. But if you look at the pictures, I think the presentation of the bread was backward, as it does not show the little bits of cheese that were almost looking like encrusted into the bread. Sorry to nip pick, but this is supposed to be a Michelin restaurant after all.
Food aside, the staffs were friendly but seemed very busy zipping from one table to another. During my reservation I noted ‘no fatty protein’, which meant no fatty animal meats like wagyu and others. After we sat down, the staff asked again if we have any dietary restrictions and I said no fatty protein again. I guess that was unclear and I should have given examples of fatty animal meats, because they gave me PEAS instead of the signature egg app. I clarified and said I would prefer the egg, staff said it has a lot of butter and whether that’s ok, after my confirmation they brought out another egg app for me quickly, so all is well in the end.
We ordered 2 mocktails, Matador and Madame Yang, both delicious but were disappointed it came from a bottle rather than home made. Upon checking, the bottle goes for €3.5, and we are paying €12 each, also €8 for flat water, seems steep markup.
Une cuisine du sud-est revisitée. Les accords fonctionnent parfaitement, des amuses bouches au dessert.
La bonne inspiration : une foccacia d'accueil accompagnée de son huile d'olive !
