Un restaurant extraordinaire, merci au chef Passard pour sa cuisine d'artiste et son contact humain. Nous avons tous passés un moment particulier et précieux.

My wife and I visited Arpege on 27-May, 2025. The overall ambiance was impressive. It was a classic French meal in a beautiful establishment. The professional staff was knowledgeable, efficient and friendly. They catered to every question and need. Each course was explained and when appropriate, highlighted were meat and dairy were replaced. I applaud Chef Passard for offering a complete whole-food, plant-based menu. It is sustainable, healthy, and good for the environment. He uses the freshest, in-season vegetables from his organic garden. Chef Passard’s passion for cooking with vegetables, shows. You can tell his meals are made with love. This was a once-in-a-lifetime experience and we were thrilled to be invited into the kitchen to meet the man himself. Bon appetit!

Après une première fois remarquable il y a un an, j'ai trouvé certaines assiettes "très/trop" osées (céléri aux fraises) ou à l'opposé très classique (salade verte).
L'ambiance est toujours bonne et décontractée (voire un peu trop - un client était en T-shirt blanc. :( ).
Globalement nous étions moins emballés, contrairement à la note par rapport à l'an passé...

I've been to 3 star restaurants before and must admit was rather disappointed at Arpège. We went for the lunch tasting menu which consisted of all vegetable dishes. The chef was creative and the strawberry/onion cold soup with with wild celery ice cream was amazing, the best thing we had that day. However, the service was disappointing. The serving staff was chatting to each other on the dining floor (which is very small btw) - something I wouldn't expect nor have seen at other michelin star restaurants. A lot of time, they just stood around, not being attentive to diners and when clearing our plates, they put the dishes away in a couple of stations they had where at times the plates would stand for quite some time. Again, never seen that at a michelin star restaurant before - you don't see dirty plates stacked up on the dining floor. When we sat down, they asked if we wanted to use English or French, we said French. One would've expected them to remember this (quite basic service I'd say) but they used English and French interchangeably as they pleased. They kept pouring our water glasses and when we finished a bottle, without even asking they opened another one and started pouring so we thought water was part of the service (the water bottles didn't have any logos/brands) or where you pay 2-3euros and get unlimited. How shocked were we when we got the bill and we had to pay 8 euros per bottle of water! Again, the lunch menu was 240euros pp so it's not that we can't afford to pay for water but surely, one should ask the diners if they want more water before just going ahead and opening bottles? It really was a shame that the service didn't live up to michelin star restaurant standards - was actually quite shocked they could have 3 stars as it's not just about the food but the overall experience. We were there on our mini honeymoon and as a congrats they gave us 2 scoops of rose ice cream with 'happy honeymoon' written on the place in chocolate. We could've done without it, the ice cream tasted like just shaven ice. Again, if you want to treat us to something special, would expect more than this - both in taste and in presentation. It's unlikely we will go back even if the food was good - there needs to be more than just the food for that price tag.

Exceptionnel. Un festival de saveurs, une fabuleuse technique culinaire au service d'une imagination sans égale. Servir un repas entièrement composé de légumes de saison (douze plats différents) n'est possible qu'à un génie des fourneaux. Tout est de haut niveau, accueil, service, disponibilité et compétence du personnel.

Nous sommes habitués des restaurants étoilés, en particulier la cuisine végétale (Geranium, Air du Temps, Fields,…). Il n’y a aucun débat sur la qualité des produits et la démarche mais nous sommes néanmoins sur une grosse déception, le chef a confondu simplicité et simplisme et semble se reposer sur ses lauriers, fussent-ils frais du potager.

Other reviewers have already said almost everything there is to say about this place. The vegetables and salads are all very nice but finesse is missing and the dishes are repetitive. The atmosphere is dull. The amuse gueule often already foreshadows all there is to come and this was not different here: plane, cute and nice, pure uncooked vegetables, pees, carrots, cauliflower etc. Vegetarian classy cuisine does exist but it is still rare in the world, I’ve visited the kings joy in Beijing and it was really perfect. But here at the L‘Aperge they seem to think the realization that vegetables are a delightful food ingredient is shocking enough and nothing else needs to be done to create true beauty. I would even agree to this but such realization should NOT lead to three Michelin stars! Not sure what the tasters experienced but it seems also for them the sole fact of eating only pure vegetables felt so exotic and exciting that they gave such a high score. I would argue this style food is only “second wave“ towards world class vegetarian food. First wave was traditional French style, when only the meat and fish counted and the vegetables were good but never the main character in the dish. The second wave is realizing vegetables are amazing and can be the key to a dish, the third and still underdeveloped wave will be the true art of creating delightful food with vegetables.

I am endlessly grateful for the dinner on May 26, 2025. This was my second visit, and I want to say a heartfelt thank you for this experience. Your restaurant is not about food — it’s about emotions and memories.

Yesterday, I was transported back to my childhood, filled with the scent of meadow herbs, the boldness of radishes, the slightly “burnt” crust of bread, and the taste of the plant we used to call “little watermelons” — prosvírnik (mallow). Every child in the Soviet Union ate it in the 1980s. Back then, we were carefree and happy.

This was an incredible journey, and I feel so lucky to have experienced it in your restaurant.

A special thank you for giving me the opportunity to thank the chef in person.

As someone who has worked as a chef my whole life — for whom cooking is a passion and a calling — seeing Alain Passard in person, in his kitchen, felt like witnessing the creation of the Mona Lisa.

Unfortunately, I was so overwhelmed that I couldn’t manage to say anything coherent to him. If possible, please pass on my gratitude to him for the motivation and inspiration he gives — through his craft and his very being — to so many chefs around the world.

Looking forward to seeing you again in August.

Overall, our experience was an immense disappointment. One of my dishes had paper stuck to lettuce, which I discovered while eating the dish. It was not a significant problem so I did not bring it up with the waiter, but it is surprising given the level of attentiveness to details I expect at a restaurant of this caliber. I figured that mistakes happen, and it was not a big deal. For dessert we were each given one strawberry, which would have been fine if my strawberry was not eaten through by a worm or some other type of bug. If you are only going to give a diner one strawberry, it should at least be a nice strawberry. When I alerted our waiter, he could not have cared less, barely listened, but did bring a new strawberry (and left the bug-eaten strawberry on my plate). The other dessert was a rhubarb dish. Mine came with a weird large rough item, which clearly was not supposed to be part of the dish. My dining companies did not have anything like it in their dishes and we all thought it seemed odd. I asked the waiter about it and he said it was simply the leaf of the rhubarb and it was fine because everything came from a farm. But rhubarb leaves are toxic for humans, so it is a problem. The combination of dismissiveness from the staff and the careless mistake after mistake was frankly shocking to me. They place vegetables on the tables instead of flowers, which is a lovely idea and looks stunning, but the cauliflower at our table was crawling with aphids, which meant our table was also crawling with aphids throughout the meal. I get that they want to showcase their growing practices, but the cauliflower should have been rinsed before being placed on a table or they should have selected a vegetable that is easier to clean. As a vegetarian, I have been eager to visit this restaurant. It is highly unusual for me to bring up issues as a diner, or even write a bad review, but after this experience I thought I should warn others. Some dishes were good and the space was serene, but not enough to make up for the experience or the price. I would never recommend this restaurant. It was the worst 3 star Michelin meal I've eaten, and worse than many restaurant experiences in general--- and I should emphasize that it is not bad because it is plant-based or because it is boundary pushing, it is bad because they were sloppy, dismissive, and just did not seem to care about diners or the food they were serving.

For anyone interested in vegetarian food prepared and served at the highest level, this is heaven. The food is amazing and the service is reminiscent of a bygone era when the staff was ever present but never intrusive. This was our third visit and we will return every time we are in Paris

I’ve been to many Michelin restaurants all around the world but this one was by far the best in terms of service, sincerity and taste! The main chef came next to us, celebrated my bday and asked how was everything where you wouldn’t see easily in a Michelin restaurant. Kudos to the entire team!
