Les meilleurs à Paris et autour

Both times the experience was sublime. The food was so good, beyond our wildest imagination, both in creativity, elegance, and balance. Never did one aspect of any dish overpower the other, always a perfect synthesis of imagination, appearance, and taste, just so so good.
The service matched the food in everyway. This is an eight table restuarant and Shawn Joyeux and his staff have an ucanny ability to understand what each group hopes to experience at Alliance and delivers on the experience! We watched Shawn and his team interact with each table differenltly, as was their wish.
Finally, at the end of the meal both in December and May, we were honored to be greeted by Chef Toshitaka Omiya, who inquired as to our happiness with the meal. Of course, we could only share our joy with such an experience.
This is our favorite place in Paris and we make sure to dine here each visit. As you will notice, we have no photos as we are so engrossed in the experience, we never think to record th event!
The service was warm, fun and friendly while still maintaining and air of formality commensurate with a restaurant of its class.
It is so abundantly clear that absolutely every single person in the establishment approaches their work with deep passion and reverence for the craft of hospitality that they deliver.
Each table’s experience is different with menus being tailored toward preferences and allergies in the moment.
The pacing was perfect, the wine pairings were delicious and the food was exquisite from beginning to end.
I am in awe of the chef and his team. Get to this place before it gets its second star and you’re unable to get in!
I will definitely be back if I return to Paris.
We did the 5 course menu, all the food was incredible. We’ve never dined at this type of restaurant before so we weren’t sure what to expect, thought we might end up leaving while still hungry but couldn’t have been more wrong. We were both incredibly full and satisfied at the end of the meal.
The staff were truly amazing. They were friendly, attentive, and personable.
The next time we come to Paris we will absolutely eat here again.
Over the years we have eaten hundreds of meals out in Paris, some meals in very simple low priced restaurants , many meals in three Michelin star restaurants and everything in between. We have had many good meals, but not that many truly memorable meals, meals I will remember for years and years. Our meal in April was one of those meals. My wife and I both had the same entrée and same main course, asparagus for the entrée and pigeon for the main course and both were truly as good as can be imagined. It is obvious that Alliance uses the same high-quality ingredients that can be found in three Michelin star restaurants.
The restaurant itself is beautiful and spacious.
Also, outstanding was the service, perfect service.
By the way, the Chef and the Maître de own the restaurant, they are not employees.
We can’t wait to return!
Inoubliables
Intelligent and intriguing wine matching. On top of all this excellent and heartfelt service. Only minor, extremely minor, negative was the soft covers soundtrack playing in the dining room. It's at a very low level so it doesn't disturb. But I would have preferred to hear the lovely bird singing in the bathroom in the dining room as well.
To begin with, the food, though well-presented, was quite average overall. There were no standout dishes that tasted or looked exemplary.
Perhaps the biggest issue is the service. During the course of my two-hour dinner, one of the waiters dropped two of the foods (one appetizer and one dessert) off their presentation trays. In the instance of the dessert, he simply put it back onto the tray instead of replacing it. This is unacceptable for a so-called Michelin-starred restaurant.
A second, taller waiter with glasses also dropped a spoon into my plate which produced a loud sound. While initially a non-issue, he went on to drop another customer’s umbrella as they were leaving the restaurant and immediately dropped his coat after that.
As someone who has dined at Michelin restaurants of all stars as well as other high-end restaurants all over the world, the food and service falls painfully behind at this establishment. Rightfully, there was no tip and for a menu of 175€ pp, I am far, FAR from enthusiastic to recommend this place.
We ordered the 6-course Resonance dinner menu (€175 per person) and were surprised with more than 10 courses served. Memorable highlights included the oysters, scallops and foie gras.We had a delightful dining experience over 3 hours. We even received pastries and bread to take home.
