After our flight was cancelled, we booked Hôtel La Dimora & Spa online at the last minute, very late in the evening. Within minutes, the receptionist called us personally to ask if she could prepare anything. When we finally arrived late at night, everything had already been taken care of with genuine warmth and professionalism.
Our suite was prepared while we were invited to enjoy a late dinner in the hotel's exceptional restaurant – even though we arrived at the very last moment of the opening times. The food was exquisite, and Chef Fabrice Giraud came by in person, which made it all the more special.
The hotel itself is a peaceful oasis: a beautifully restored 18th-century house with a tasteful garden, a charming pool area, and an atmosphere of effortless elegance. Also worth mentioning: the hotel is very dog-friendly – even by the pool.
Perfect hospitality, great cuisine, and an extraordinary setting. Highly recommended!

Das Restaurant bietet ein Menü mit einigen Auswahlmöglichkeiten. Wenn man jedoch mehrere Tage im Hotel verbringt, wäre ein mehrfach wechselndes Menü wünschenswert gewesen. Das Essen schmeckt nämlich hervorragend - und auch für das Auge sind die Gerichte sehr schön anzusehen!
Das gesamte Hotelpersonal ist sehr freundlich und zuvorkommend, wir haben uns sehr willkommen gefühlt! Beim Servicepersonal für den Abendservice fehlte es leider ein wenig an fachlichem Know-How. Aber die Freundlichkeit und Herzlichkeit machte alles wieder gut!
Wie hatten eine Junior Suite gebucht - sehr geräumig mit einem extra WC. Bequemes Bett! Die Ausstattung ist sehr hochwertig und die Einrichtung wirklich geschmackvoll.
Die Hotelanlage ist und wird sehr gut gepflegt - auf Sauberkeit wird großen Wert gelegt. Das Design der Anlage ist sehr edel und wunderschön anzusehen. Gemütliche Stimmung an der Bar im Freien sowie im Restaurant im Innenbereich. Nennenswert auch der schöne, große Pool zum Schwimmen!
Wir empfehlen dieses Hotel wärmstens weiter. Wir hatten einen unvergesslichen Urlaub und bedanken uns von Herzen dafür <3
The service was impeccable: attentive, discreet, and genuinely kind. Everything is done to make you feel at ease, in a calm and serene atmosphere where we were able to truly disconnect and feel a sense of harmony.
Our ground-floor room opened onto a small private garden. It was spacious, bright and very comfortable, with personalised, tasteful decor that made us feel instantly at home.
The restaurant was wonderful. The board menu had some daily changes and ingredients were seasonal and mostly locally sourced. The food was prepared with finesse and lightness, showcasing the richness of Corsican cuisine without being overwhelming to us. The crab and Granny Smith appetiser was one of my favorite, and the Zucchini flowers, which I always love, were exceptional. I also had the John Dory fish which was perfectly cooked and full of delicate flavours. Desserts were on the lighter side, balancing fruit and sweetness, which we truly appreciated.
For us, La Dimora was a place where we instantly felt at home. It combines the charm of a historic property with the comfort of a luxury retreat. We found the region around Oletta and Saint-Florent to be a hidden gem, full of natural beauty, characterful villages, and stunning coastal landscapes. We felt the authentic soul of Corsica and loved it.
However, their restaurant is a disaster. Overly long and complicated menu, many dishes, many ingredients. Was May, not high season, so only two other couples dined that evening. I wanted a simple garden salad to start, which they could not do (a first for a French restaurant) so I skipped the first course in anticipation of my 330 g côte de veau. My wife had the tuna tartare, while the fish was fresh the flavor was completely lost to other ingredients, tasted raspberry sauce more. For her main she had the seafood pasta, which came out as a dark unidentifiable sludge over noodles, vague unpleasant fishy flavor. It was like they mashed and boiled a week of leftovers. She could not finish it. And my veal came out not au pointe but overcooked gray, dry, and clearly much smaller than advertised – I know what 3/4 pound of steak looks like. My guess is this was the old stinky piece of veal that needed to either be thrown away or cooked thoroughly, and the chef guessed that the American would not notice the difference. Very wrong, I sent it back and given their three strikes, just had bread and wine.
The problem is entirely self-inflicted – the menu is too complex to keep fresh ingredients and prepare properly for so few guests outside of peak season. Fire the chef – there is no way a competent professional did not know what he/she put on that plate for me was dreck. And simplify the menu, fewer and fresher ingredients, focus on flavor vs showing off – and I would happily pay same price for the ambience. But their lack of ability or interest to serve a decent meal ruined our evening. Nearby, Cigale serves delicious traditional Corsican fare - La Dimora would do well to emulate.
Le restaurant est très agréable et nous avons adoré l'excellente cuisine proposée par le Chef. ( et en plus les légumes proviennent principalement du potager de l'hôtel !)
Nous avons eu également la chance de participer à une soirée "saveurs des îles" : repas au bord de la piscine au son d'un groupe de musiciens... une belle soirée inoubliable.
bref un séjour reposant que nous n'oublierons pas de si tôt...
Very comfortable rooms, helpful friendly staff, a lovely pool area and good food. A generous breakfast selection and an excellent restaurant for dinner. The food at dinner was delicious.

Nous avons eu le plaisir de dîner à la très bonne table de l'hôtel qui propose des mets raffinés dans un cadre idyllique.
Le personnel est adorable et bienveillant, nous avons été chouchouter tout le long de notre séjour. Il nous a été proposé de profiter des espaces extérieurs et de la piscine même après avoir quitté la chambre le lendemain, nous avons sauté sur l'occasion pour prolonger la détente et profiter de la table pour le déjeuner malgré le petit-déjeuner buffet très copieux, complet et délicieux.
La chambre et la literie ne dénote pas du reste de cet hôtel.
Pour résumer, cet hôtel est un endroit parfait pour se détendre et se ressourcer, je recommande vivement et j'ai hâte d'y revenir.

Restaurant parfait autour de la piscine, cuisine corse typique et raffiné. ( léger bémol nous avons réservé une table et à notre arrivée elle était occupée)
