On a busy Friday night, we went to the PiNKU fish & wine restaurant in the centre of Split's old city. With a view of the nearby fish market, where they get their fresh ingredients, the setting and mood were excellent. The server was really friendly and helpful, willing to guide us in selecting the right wine and food from the menu. We chose a six-course tasting menu including a few starter courses. Every dinner was so delicious that I can't decide which was the best. Each course was presented to a Michelin star standard. We definitely plan to return.

Small, charming, and fun restaurant with great drinks and food. Tuna tartare, squid, sea bass, 50/50, Adriatic G&T were all great.

Really inventive fish tasting menu. I could not eat raw fish due to pregnancy and they were very accommodating and substituted 2 dishes for my menu! The staff was very kind and attentive. Very small space but the outside tables were lovely. A unique experience, to be sure.

Very interesting food and mix of tastes. I can argue about some dishes, they are not perfect. For example tuna was poorly cut and was not cleared from veins and generally was served like meat tartar with lots of seasoning, but it is wrong way to serve raw fish.

Really delicious and thoughtful preparation of prix fixe, plus wine pairing was tremendous and elevated the experience. Mia took great care of us (friendly, outgoing, very knowledgeable) and made sure we thoroughly enjoyed!

First of all, the service and the staff are top and there's nothing to fault there, really kind and friendly. Unfortunately, in my opinion (and my personal pallet) the food just didn't quite hit the mark on 2 of the 5 dishes that we ordered. I do appreciate the amount of work that goes into creating these dishes, and to a lot of people they would have hit the mark.

First of all the 2 best dishes which were the tuna tartare and the burnt sea bass. Both had really good flavours with great balance and were very fresh, excellent cooking for both.

The 2 dishes that didn't quite do it for me were the smoked monkfish (croquette) and the poached and smoked squid. The smoked monkfish croquette I found to be very strong in the smokey flavour and lacked seasoning, the pea and mint sauce that it comes with is very light and delicate, so the strong smokey flavour of the monkfish overpowers it so you're left with a lingering smokiness in your mouth. I think if you tone down the level of smokiness in the fish, add more seasoning and serve it hot with the cold pea and mint soup, it would balance better. Because the croquette is served cold, that intensifies the smokey flavour. The poached and smoked squid, sorry to say I found it quite bland and wasn't sure what flavours I was supposed to pick up as any flavours were very subtle. Again a cold dish, which I think would be better served hot.

Not sure if we would have liked more dishes if we went for the tasting menu, but right now for the high end price you're paying, complexity and creativity of cooking that's being delivered, it's a shame this does not show on the end result of some of the dishes. I'm sure a lot of locals and tourists loved the dishes, but with a little rethink and small changes the dishes could be so much more.

Decided to try the tasting menu to celebrate and was not wowed. The food was just average for the price point and some of the dishes did not have the right flavors come together. The most disappointing dish was the Bonito which were just three tiny pieces - surprised that this was considered one course. Most of the starting dishes could be improved but the hake and shark were delicious. The service was great and the atmosphere was lots of fun. Definitely tons of potential here!

Notre meilleur restaurant de nos vacances en Croatie. La justesse des plats est absolument parfaite, ils sont originaux et le concept de ce resto est une idée lumineuse. L'équipe maîtrise parfaitement sa partition, tout est propre, professionnel, et avec un zeste d'humour qui fait toute la différence. Les prix sont amplement corrects pour la qualité des plats. Nous avons adoré! 5 étoiles ne suffisent pas ;)

We had the absolute best meal and experience at PiNKU. Incredible food, amazing service, and a friendly chef! You should book your table now for PiNKU on your visit to Split. We had the tasting menu and every dish was absolutely delicious.

Clearly a lot of thought went into the fantastic tasting menu, with many dishes daring to go into unusual directions - oh but how it pays off! We highly enjoyed the excellent menu and would also like to highlight the immensely kind and helpful service. We will be back!

Food was good. But,
Please update Michelin from 2 to 3 $ signs. Please update chairs to wait 2 hours on confortable stool. Please put more wine in our glasses not 4 sips. Please if you serve cheese, provide bread. We had to wait 50 minutes between our 2 plates, if you want to really apology bring something... At the end we paid 85€ we are not full and not drunk. It's a concept issue not a cuisine issue for us.

Smart and thoughtful, yet relaxed.

The setting was soft and simple, lounge-like, sleek and elegant.
The staff knew exactly what their job was and it seemed like they were genuinely happy to do so. The chef handled multiple courses for several tables all alone and without ever beeing in a rush. The food was delicious, showed both balance and depth, and presented the fishes elegantly with minimal transformation. The ingredient pairings where sometimes classic sometimes very bold, but always felt obvious after tasting. The wine list showed great respect to the local producers with amazing bank for your buck ratios.

All in all, PiNKU serves a clear, intelligent and efficient cuisine, that shows deep affection to the local culture. But if the quality is very high and the execution flawless, be wary that you will be decieved by this calm restaurant where everything flows so naturally.
I find this to be a great direction in which to take modern cuisine.

We came here on recommendation and went for the tasting menu with wine pairing. We had a fantastic waitress who explained what everything was. I think it was probably the best food I have ever had. All the dishes were unique, delicious, and well presented. The wine was all Croatian and fantastic.

We were looked after by the owner of Pinku. His passion for delighting his customers is so evident and infectious. It’s no wonder that it carries a Michelin 2023 listing. We had a the tasting menu which was one of the top 5 meals we’ve ever had … it blew our mind. Even if you have to travel to Split just for the Pinku experience … do it! You won’t regret it!

Nous avons pris le menu dégustation. Tout les mets résultent d'un savoir faire aiguisé, d'un travail pointu, d'assemblages parfait, donnant des assiettes exquises. Des saveurs inattendues et superbes.
Le blanc de noir était délicat, le sauvignon de Galić surprenant et excellent.
Le service est discret et chaleureux. En résumé, nous avons passé un magnifique moment, et le Pinku est sans conteste l'un des meilleurs restaurants que j'ai pu tester !
Si nos pas nous conduisent à nouveau à Split, nous reviendrons sans hésiter.
